Adventures in Juicing: WAKE ME UP GO GO GO

After a quick trip to the farmer's market yesterday, I decided to try out something new. 

This juice is delicious, and packs a little punch because of the citrus and ginger. Enjoy!

5 small gala or fuji apples
2-3 inches of ginger
2 grapefruit
1 lime

BAM. Also, look at all that fiber! Soooo much fiber! And even more Vitamin C! And 11% of your calcium! Everyone should just drink fresh juice ALL THE TIME.

The Most Incredible Potato Salad Of Your Life...That Happens To Be Vegan.

Mayo-based potato salad is gross and unhealthy. Try this instead!

Ingredients:

4 pounds yukon gold potatos
1/2 cup extra virgin olive oil
6 tablespoons vinegar (I mixed seasoned rice vinegar, white wine vinegar, and a small amount of balsamic)
1 or 2 grated carrots
1 bunch green onions (or chives, or both)
1/2 bunch fresh dill
1/3 cup chopped chives
1/2 onion
1/2 cup diced celery
3 teaspoons dijon mustard

Cut those potatoes up into bite sized pieces, then boil them in slightly salted water for 10-13 minutes.

While they're boiling, mix all the other stuff together.

Drain the potatoes, and mix them in!

All done! Let it sit in the fridge for at least 30 minutes before serving, so the dressing will soak into the potatoes and the flavors will mix and mingle.

Quick, Easy, and Vegan Cheese Straws!

2 cups non-bleached flour 
2 cups shredded Daiya cheese (I used Mozzarella)

3/4 cup Earth Balance (melted)
1 teaspoon baking powder
1/8 teaspoon cayenne pepper
1/8 teaspoon chili powder
1/4 teaspoon Italian seasoning
1/2 teaspoon salt

1/2 cup water

Preheat your oven to 400 degrees, then mix together all the ingredients except the water. Slowly add the water, mooshing the dough together. You'll end up with a stiff dough that isn't sticky, but that's a little crumbly. 

Here's the dough before adding the water:



Roll the dough out to be about 1/4" thick, then cut it into long, thing rectangles. Shorten them as necessary. 

Bake them at 400 degrees for about 5-15 minutes (depending on thickness), or until they start to lightly brown and are nice and crisp.

Pizza in Three Parts | Parts II and III

Isn't pizza fun??

While your dough is rising, get started on the sauce! This is my favorite part, and I get really sad when places give me pizzas with lackluster sauce devoid of flavor. This is a sauce method I developed that will ensure your sauce is PACKED full of delicious things. 

In your food processor, puree half an onion, four or five cloves of garlic, some fresh minced basil, and a red bell pepper. 

Throw that in a sauce pot with some olive oil, and heat over medium heat until it starts to bubble. 

Stir it, and let it simmer a bit, then add a can of tomato sauce. 

Stir well, and let this simmer while your dough rises. 

About 15-20 minutes before you are going to make your pizzas, add some spices! Standard spices include paprika, chili, salt, pepper, red pepper, basil, oregano, thyme, rosemary...whatever you like! Add some cayenne if you like things spicy!

(Pro-tip: Always add spices to things just before they are done cooking, especially in sauces or crock pot recipes. If you let the spices simmer for too long, the flavors will muddle and start to deteriorate.)

Now for toppings, the easiest part of all!

Throw mozzarella cheese and whatever veggies or fruits on top that your little heart desires! Tonight we simply added orange bell pepper, and it was delicious. 

Other exciting things I have topped pizza with include gnocchi, almonds, tofu, fake chicken, zucchini, goat cheese,  and a whole bunch of other crap.

You'll bake your pizzas at a blistering 485 degrees for 10-15 minutes, until the cheese is bubbling all over and just barely beginning to brown.
